Ingredients

Chocolate Chia Vegan Breakfast Cookies

2 large ripe bananas

1 cup smooth natural almond butter (I used peanut butter instead for the ‘mix it up’ option!)

¼ cup chia seeds, soaked in ¼ cup water for 10 minutes

¼ cup unsweetened cocoa powder

¼ cup coconut sugar

1 tsp vanilla extract

1 tsp baking powder

Optional Mix-Ins

⅓ cup chopped peanuts (for 'mix it up' option)
