1 cup cooked savory oatmeal base
2 Tbsp goat cheese crumbles, divided
¼ cup sliced onion, sautéed
¼ cup sliced mushrooms, sautéed
1 Tbsp pine nuts
2 tsp chives, chopped
- In a pan over medium heat, drizzle a bit of oil and add onion and mushrooms, seasoning to taste with salt and pepper.
- Turn heat to low and sauté 20 minutes, until tender and caramelized. Set aside.
- Stir 1 Tbsp goat cheese into warm savory oatmeal so it melts. (Save 1 Tbsp for topping!)
- Add remaining toppings, serve, and enjoy!
