Slow cooker chicken breast with corn, black beans, bell pepper, and a citrus twist.
2 lbs (900g) boneless skinless chicken breast, cubed
1 green bell pepper, chopped
1 yellow bell pepper, chopped
2 cups (260g) chopped zucchini
1 cup (150g) red onion, diced
1 (16 oz, 450g) bag frozen corn
1 (15 oz, 425g) can black beans
2 garlic cloves, minced
1 cup (235 mL) broth
½ cup (15g) cilantro, chopped
2 limes, juiced
1 tsp cumin
salt & pepper, to taste
Add your favorite toppings! I love sour cream, guacamole, salsa, cheese, etc.
- Add all ingredients to your slow cooker and cover.
- Cook over low heat for 6 hours, until chicken is tender.
- Serve with tortillas, on a salad, or as a burrito bowl with rice!
- Top with sour cream, guacamole, salsa, cheese, or your favorite toppings!
