Slow cooker beef chuck with fajita veggies & spices.
2 lbs (900g) boneless beef chuck shoulder roast, fat trimmed, cut into strips
1 red bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1 green bell pepper, cut into strips
1 onion, thinly sliced
3 cloves garlic, minced
2 limes, juiced
1 Tbsp chili powder
2 tsp cumin
1 tsp paprika
1 tsp salt, to taste
- Add all ingredients to your slow cooker and cover.
- Cook over low heat for 8 hours, until beef is tender.
- Serve over rice or with tortillas with your favorite toppings!
