Microwave Oatmeal Cookie for One

Ever have that feeling? You know, the “I NEED A COOKIE RIGHT NOW AND I DON’T WANT TO HAVE TO WAIT OR MAKE MORE THAN ONE” feeling? Well, I get it often, and today was one of those days. I decided to try a new microwave cookie. Easy, quick and satisfying! Also, it should be noted that the entire cookie is barely 100 calories! (sans chocolate chips).

INGREDIENTS
  • 1/4 cup oats (I used old fashion but would have used quick cooking if I had them!)
  • 1 tsp whole wheat flour 1 Tbsp unsweetened applesauce (I may add another tsp next time… You decide based on your consistency)
  • 1 Tbsp egg whites 1/2 packet stevia (more or less to taste)
  • A few sprinkles of cinnamon
  • 1/4 tsp baking powder
  • 1/4 tsp vanilla
  • Optional- chocolate chips (I used a few dark minis on top)
PROCEDURE
  1. Mix all ingredients except chocolate in a bowl.
  2. Form dough into a cookie shape and flatten (it won’t rise much)
  3. Top with chocolate chips.
  4. Microwave 60-70 seconds!

**Alyssia's tips: NOTE: you may want more applesauce for moisture, as noted above. If you have time and want to cook this in the oven, it would likely work fine and crisp up a more like a traditional cookie. Get creative and add desired mix-ins such as nuts or raisins!.**
